Cajun Spice Rubs

Cajun Rub:  Here is a basic spice rub which can be used for poultry, pork, or fish.

2 tbsp. pepper (white or black)
1 tbsp. cayenne pepper
1 tsp. dried thyme
1 tbsp. garlic powder
1 tbsp. onion powder
1 tsp. salt

Another Cajun Recipe:  The addition of paprika imparts an appetizing color to cooked poultry.

2 tbsp. paprika
1.5 tsp. white pepper
2 tsp. salt
2 tsp. onion powder
2 tsp. garlic powder
2 tsp. cayenne pepper
1 tsp. dry thyme
1 tsp. dry oregano

Flavorful Rub:  This rub is great for grilling, blackened steaks and fish.

half cup salt
quarter cup chili powder
quarter cup paprika
2 tbsp. onion powder
2 tbsp. garlic powder
2 tbsp. cayenne pepper
2 tbsp. black pepper
2 tsp. dry thyme
2 tsp. dry oregano
2 tsp. dry basil
1 tsp. cumin

B.B.Q. Chicken Rub:

2 tbsp. brown sugar
1 tbsp. paprika
1 tbsp. dry sage
1 tsp. cumin
1 tsp. cayenne
1 tbsp kosher salt
1 tsp. white pepper

Caribbean Jerk Rub:

8 green onions chopped
6 jalapeno peppers chopped
third cup redwine vinegar
2 tbsp. vegetable oil
2 tbsp. ground allspice
half tsp. cinnimon
half tsp. nutmeg
2 tbsp. soy sauce
1 tbsp. cayenne pepper
1 tbsp. kosher salt

Puree in food processor or blender until smooth.

Lemon Pepper Rub:

Use on grilled poultry, fish, or even vegetables.
2 tbsp. lemon pepper
2 tsp. garlic powder
half tsp. cayenne
1 tsp. kosher salt
half tsp. sugar
